Can anyone tell me if the Timing Shims from the other guys work on Ultrasabers and also how they work to line things up?

If you are talking about TCSS (we can tell about them here) then yes they work. Although I'm not sure why you would need them on an US because they come already lined up.

As for how they work, in theory if something didn't line up you can use one or more between MHS parts. The pieces well not rotate as many times as without them (they are covering up threads). But that doesn't mean that it will be the right thickness to line it up perfectly.

The pommel on a friends saber is slightly off from where he wants it to line up

Hi.  The other guys don't work... are not a large enough diameter ring.  You could try a very narrow 0 ring from plumbing or automotive supplies.  Depends upon how much of an alignment adjustment you need.  I found a flat metal jewelry ring/circle at Michael's Crafts that was perfect for what I wanted.  Was surprised that it worked just right.  :)

If you buy something from the other guys when you should've bought something from US or TCSS, you're gonna have a bad time.

Well if US offered timing rings I would buy from them but seeing as they dont I will look into TCSS.

TCSS will do right. Good luck! I just spent way too much with extra ideas there today. It started with simple things, then my mind exploded. Now I'm getting powder coated emitters after I just bought an EH yesterday. My poor hypothetical children would be starving, if they weren't hypothetical and therefore in no need of money.
