Disney has popularized the non-canonization of franchises to make things easy for anyone moving forward with an 80's jumping point. If they're gonna wipe out everything that happened since the 80's, they should at least cover what's happened since then with an awesome montage.

Because it's a fun thing they do. They did it with Jurassic Park, Predator, Mission Impossible, every DCEU movie before Justice League came out and every Marvel movie before Infinity War came out.
