This is part of the pupils and teachers of my school, as they pose in front of our banner before the school tournament last week.
I am the one with the red subtunic in the center. Every year this picture is a bit larger and I am fairly proud I had a part in this.

Great question. Younglings wear a black tee and pants. Padawans add a belt, beige subtunic and black tunic (not shown in the picture) and use blue sabers. Jedi / Sith ranks and Instructors have a colored subtunic, but the color is their choice (either red, orange, green or yellow); they can also choose the color of their saber. Knights and above have longer tunics, but the same subtunics, and Masters have even longer tunics. There are some more details but this is a good summary. The picture below shows the tunic / subtunic ensemble.
