Im planning to buy a custom saber next if i like my first purchase (im sure i will) but i was wondering if i buy an empty hilt like the catalyst can i take the emmiter and pommel off for customization purposes.

The Catalyst has a different style LED from all other Ultra Sabers which prevents the emitter from being easily swapped out. But the pommel is MHS compatible.

The emitter on the Catalyst is MHS, it is the choke/neck between the hilt and emitter that you can't change because the LED unit is in it.

He's right on this. It's the choke that causes the difficulties in the Catalyst and Dark Catalyst.
But, if you order the LED with quick disconnects, you may be able to work around some of that
