If you watch Yoda vs. Count Dooku in AOTC, Dooku seems to do all these twirls with his saber, especially twirling it one-handed  behind his back while spinning his body the opposite way. I tried doing that but I'm sure I got it down wrong. Any help?

There is this one German channel on youtube where it teaches some lightsaber tricks. There's this one trick where you twirl the saber behind your back, but it requires 2 hands. Behind your back, the saber passes from the left hand to the right hand.

Dooku does it with only one hand which is impressive.

Pretty sure that is the obi-ani or eclipse spin you are talking about. It is two rotations behind your back and one in front of you. If done with a turn, it looks a lot more complicated than it is.
If Scila and I are right about what it is you are talking about, this might help.

That's definitely an eclipse spin/infinity spin, also known around the lightsaber community as the obi-ani as stated above (In ROTS during the Obiwan/Anakin fight they both do this move for an extended amount of time). DC's video is excellent for teaching the move. It seems confusing at first, but once it's locking into muscle memory it's a very easy movie to preform.
