If I buy a menace with sound, can I attach the Dorinian to the bottom pommel side of the menace? Are the parts compatible?

Also is the Dorinian pommel comparable with the Initiate LE v5?

Yes, outside of the V2 sabers which are smaller, all of the US sabers are compatible.  You can swap pommels to your heart's content.  :-)   One thing: If you wish to couple two hilts together you will need a coupler to join them.  These are available on the US site.   I personally like the flush adjustable coupler with vents for sound, as it allows you to adjust how the two sides of the coupler fit together so you can line up your switches.  :-)

There is also a standard flush coupler in silver or black, and a vented coupler in silver or black that is a bit more ... flamboyant.  And the quick-release vented coupler, which allows for alignment and quick separation of the sides without removing the coupler segments from the hilts.  This is also a great option.
