I have to include the video games as I don't know all of the jedi/sith from the comics, but I'd probably go with
1- Mace Windu (that lightsaber damn!)
2- Dooku (that lightsaber damn! also RIP)
3- Lana Beniko (from swtor)
4- Darth Nihilus (for the fashion sense)
5- Ahsoka Tano (dual wielder ftw)
