I have a blank Dominix V2 in the same color that I've been wanting to play around with/modify a bit, as well as an apprentice V4...

Yeah totally!
So all I did was to to my local arts and crafts store, and went to the aisle with the leather/ suede. I picked up what I thought would look good, and also got some gorilla glue to bond it together.
Aside from that, I then began distressing the bottom piece of suede. I would rub the entire thing on whatever, but the best thing for it seemed to be anything plastic.
I then glued the starting point to the hilt for the bottom layer,and slowly began wrapping. I made sure to tap it to make sure it was as close and tight as possible. (basically took my knife and pressed it against the bottom of the leather to eliminate gaps) and I did this all the way to the bottom.
As for the top part, I took the thin suede, and began wrapping it around the starting point of my saber again, and wound it around a few times, and then began spinning it down the under layer. I put drops of gorilla glue to ensure it wouldn't shift going down the hilt. At the bottom, I repeated what I did at the top.
Sorry if it's not too informative, I'm just getting into being "crafty".
EDIT: I forgot to talk about the paint!
So for the paint, I actually went to my local comic book shop and picked up some paint from the Warhammer miniatures game. I also popped by a hardware store to get primer and painters tape. (very important, otherwise the paint will not stick to the metal.)
I then taped up the entire hilt, and primed it. For that, I used sandpaper to rough up the hilt a little, and then used the primer to coat it. Once that dried, I used the model paint to coat, did a few layers, and was done. Only thing left to was clear coat it.
