This store might be able to help you out.

http://www.corellianimports.com/index.htmlI've personally met with the people from this business on multiple occasions, mainly from Comic-Con 2010 and Wonder-Con 2012, and even had the opportunity to purchase 2 products from them in their store, in particular 2 custom leather sleeves which I will try and show someday when I present my make-shift Jaden Korr outfit.
I can tell you first hand that they are very talented and can work with designs such as sketches and drawings.
They can be a little bit pricey, even for little things like maybe boot-gaiters, but despite that, they are very willing to work with you especially if you supply your own leather and whatnot.
I wouldn't be surprised if they could make you your Starkiller jacket right of the bat, or if you supply the base-leather jacket with them adding on all the little additions and whatnot; or they can probably just make the jacket altogether, I'm not really sure, you'd have to ask them, but I'm willing to bet they can do it.
They do, however, have the Starkiller saber-harness seen in FU2, you know, the one where he clips the sabers along his chest? I saw it first-hand at the store, it looks incredibly authentic and very durable. I can't seem to find any photos as proof, but I'm sure if you ask about it they'd bring it up.
Their Jedi / Sith tabbards with the custom embroidery are truly unique, as well as their belts which I also had the opportunity to witness firsthand.
Someday, I hope to purchase a Jedi outfit from them.
What I like about it is they are not just mass-produced items like the Jedi boots or robes you see on Museum Replica's or something, they're made pretty much from two people, a guy and girl and they really take sincere consideration into your preferences, much like Ultrasabers I suppose.
Anyways, I hope I'm not being too inappropriate bringing up another company, albeit not a saber-company (although they do sell prop-saber hilts mainly of the steam-punk variety), but a company nonetheless.
