Is it just me, or does anyone have calluses along the side of the index finger and side of index finger's knuckle when doing twirling tricks (such as the Obi-Ani Senseless 8 and basic twirl)? It hurts 😣

Depends.  What hilt are you using?  Some are more ergonomic than others, which will determine how difficult/painful it is to wield.

I'm using Apprentice V4 that has the slimmed choke under the pommel. But all the hilts made by Ultrasabers are made out of metal, are they not?

Yes, they're all aluminum, but the detailed hilts can sometimes be more difficult and/or less comfortable in the hands for certain purposes.  Apprentice is a good one though, sounds like you're just building up the standard callouses that develop in swordsmanship.  If you're concerned, you could always post a video of your spinning, which would help me understand better if you're doing something wrong.

No I don't think I'm doing anything wrong. I guess lightsaber twirling & swinging is an intellectual thing involving callus buildup, pretty much like how fingertip calluses buildup when playing guitar the first time.

Are you gripping the sabers tight or are you letting them flow in your hand?  Ideally you shouldn't have a balled fist around the saber, but basically hold it in the web of your thumb and forefinger with the rest of your fingers just supporting or directing it.
